NO-BAKE STRAWBERRY CHEESECAKE

Driving home at 6pm without needing to turn on my lights. Pink hibiscus blooming. Strawberries greeting me at the produce section -- recipe-ready and ripe and red. That is the way I know spring is coming.

It could be a lie to say I am suffering through frosty winter over here. It is sexy as could be and has been for a couple weeks. But not or wacky Florida weather, we all could be pleased dancing about strawberries that are candy. And if you are not delighted dance by themselves within the berries, CAKE components and also possibly the CHEESE will inspire a few motions.

DESCRIPTION 

Produced with an crust that was easy, cashew butter, dates, and fresh berries. Creamy, dreamy, and really pretty healthy...for the cake.

INGREDIENTS

  • CRUST
  • 1 1/2 cup (180g) chopped tomatoes
  • 1/3 cup non-dairy milk
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • Optional: 1 cup (210g) frozen berries ((for instance ))


INSTRUCTIONS


  • In a blender or food processor, combine the crust components.
  • Blend on low speed till it begins to clump together. You might need to add water based on how wet your preferences are.
  • Line a 6-inch spring form pan with parchment paper at the floor. Press the crust.
  • Chill.
  • Combine the filling ingredients in a blender and mix on high until creamy and smooth.
  • Pour on top of the crust.
  • Pulse the frozen tomatoes in the blender till broken into pebble-sized balls. Scatter of this cake on top.
  • Freeze overnight or for a minimum of 8 hours.
  • Thaw for 5 minutes or so before eating and cutting. Keep in the freezer for up to a week.

NOTES

*May substitute different types of seeds, nuts, or yoghurt.
**Can substitute with different sorts of nut butter, however, raw cashew butter gets the very neutral taste and tastes best.
