I have always wanted to attempt to earn mascarpone cheesecake and I eventually made this Chocolate Mascarpone Cheesecake Recipe. My Tiramisu Cheesecake recipe is created without mascarpone.

INGREDIENTS
For Your cheesecake crust:
- 1 1/2 cups oreo cookie crumbs -- roughly 20 biscuits
- 3 tablespoons melted butter
- 16 ounce cream cheese at room temperature
- 16 oz mascarpone cheese at room temperature
- 1 teaspoon vanilla extract
- 8 ounce semi-sweet chocolate, around 70 percent cocoa -- melted
- 4 eggs -- big, room temperature
For your chocolate ganache:
- 8 ounces semi-sweet chocolate chopped
INSTRUCTIONS
For Your cheesecake crust:
- Line the interior base of a 9-inch springform pan with parchment paper.
- Crush Oreo cookies (filling shouldn't be eliminated ) in a food processor transfer to a bowl. Add butter and blend to blend. Press mix. Bake for 2 minutes then cool for 15 minutes.
- Beat cream cheese and mascarpone cheese together for two minutes on medium speed. Scrape bottom and the sides of the bowl. Add beet and sugar .
- Mix in cream and vanilla extract.
- Melt chocolate, and allow it to cool for 5 minutes. Mix in 1/4 cup of the batter into the chocolate, then increase the mixer. Beat to blend. Add the eggsone by one, mixing to integrate after every addition.
- Pour batter over the prepared crust and bake for 1 hour, then turn off the oven and allow the cheesecake cool indoors for 30-60 minutes.
- Refrigerate for two hours.
For your chocolate ganache:
- Heat heavy cream until boiling hot. Pour over. Allow it to stand for 1 minute, then whisk to blend.
- Spread the ganache over the chilled cheesecake. Allow it to set for 15 minutes, then serve and slice.
